3 recipes using sweet potatoes and black beans

What can I make with sweet potatoes and black beans?

Sweet potatoes and black beans cover each other’s gaps. The potato is soft, sweet and filling; the beans are earthy and hold their shape, and together they make a meat-free dinner that does not feel like it is missing anything. Add something smoky and something sharp, such as chipotle or paprika and a squeeze of lime, and the sweetness stops being cloying.

There are three easy ways to put them together. Diced and simmered with tomatoes and spices, the potato breaks down slightly and thickens a chilli. Baked whole, it becomes a jacket to split and fill with spiced beans. Softened and mashed, it binds beans and cheese inside a tortilla for quesadillas that crisp in a dry pan.

Keep the skins on when you roast or bake: they hold the flesh together and save peeling. For the chilli, peel them if you prefer a smoother sauce, but scrubbing is enough. A standard 400g tin of beans drains to about 240g, which is the right amount for two to four people here.

Good to know

Rinse the beans

The liquid in a tin of black beans is thick and salty and turns sauces grey. Tip the beans into a sieve and rinse them under the cold tap until the water runs clear.

Bake two extra

If the oven is on for jacket sweet potatoes, add a couple more. Once cooled, chilled and covered, they keep for two days and are ready to mash straight into quesadillas.

Balance the sweetness

If the chilli tastes flat or too sweet, it needs acid and salt rather than more spice. Add lime juice and a pinch of salt a little at a time and taste again.

Questions people ask

Can I use kidney beans instead of black beans?

Yes. Tinned kidney beans, pinto beans or a mix work in all three recipes. Black beans are a little creamier, but the cooking times are the same.

Can I make the chilli in a slow cooker?

Soften the onion, pepper, garlic and spices in a pan first, then put everything in the slow cooker with 200ml water instead of 300ml and cook on low for 6 hours.

Can I freeze the chilli?

It freezes well for up to three months. Cool it quickly, freeze in portions, defrost in the fridge overnight and reheat until piping hot all the way through.
