3 recipes using chickpeas and tinned tomatoes

What can I make with chickpeas and tinned tomatoes?

A tin of chickpeas and a tin of tomatoes is a whole meal waiting to happen. Chickpeas are already cooked, filling and mild, so they take on whatever spices you give them; the tomatoes turn into the sauce that carries those spices and soaks into the chickpeas as they simmer.

The trick is to give the chickpeas long enough in the sauce. Ten minutes warms them; twenty lets them soften slightly and absorb flavour. Crushing a few against the side of the pan thickens the sauce naturally without needing cream or flour.

The three recipes below are all vegetarian, cheap and ready in about half an hour. One is a curry for rice or flatbreads, one is a smoky stew with eggs cooked right in the sauce, and one is a warming soup that blends smooth or stays chunky depending on how you like it.

Chickpea and spinach curry

Chickpeas simmered in a gently spiced tomato sauce with garlic, ginger and garam masala, finished with wilted spinach. Serve with rice or naan.

10 min prep · 25 min cookingServes 4large frying pan or saucepan

You have (Chickpeas + Tinned tomatoes)

  • 2 x 400g tins chickpeas, drained
  • 400g tin chopped tomatoes

You’d add

  • 1 onion, finely chopped
  • 3 garlic cloves, crushed
  • thumb-sized piece of ginger, grated
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 100g spinach
  • 2 tbsp oil (store cupboard)
  • 150ml water (store cupboard)
  • salt (store cupboard)

Method

  1. Heat the oil in the pan over a medium heat and cook the onion for 8 minutes until soft and golden.
  2. Add the garlic, ginger, cumin and coriander and stir for 1 minute until fragrant.
  3. Tip in the tomatoes, chickpeas, water and a good pinch of salt. Simmer for 15 minutes, crushing a few chickpeas against the side of the pan to thicken the sauce.
  4. Stir in the garam masala and the spinach and cook for 2 minutes until the spinach wilts. Taste for salt and serve.

Smoky chickpea shakshuka

A thick, smoky tomato and chickpea stew with eggs poached in hollows on top. Bring the pan to the table with bread for scooping.

10 min prep · 25 min cookingServes 2large frying pan with a lid (or a baking tray to cover)

You have (Chickpeas + Tinned tomatoes)

  • 400g tin chickpeas, drained
  • 400g tin chopped tomatoes

You’d add

  • 4 eggs
  • 1 onion, sliced
  • 1 red pepper, sliced
  • 2 garlic cloves, crushed
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 2 tbsp olive oil (store cupboard)
  • salt and pepper (store cupboard)

Method

  1. Heat the oil in the pan over a medium heat and cook the onion and pepper for 8 minutes until soft.
  2. Add the garlic, paprika and cumin and stir for 1 minute, then add the tomatoes and chickpeas. Season and simmer for 10 minutes until thick.
  3. Make four hollows in the sauce and crack an egg into each. Cover the pan and cook on a low heat for 6–8 minutes until the whites are completely set.
  4. Season the eggs with a little salt and pepper and serve straight from the pan.

Cook until the egg whites are fully set. Runny yolks are safe with British Lion-stamped eggs, including for pregnant women, children and older people. If your eggs are not Lion-stamped, or you are cooking for someone severely immunocompromised on a medically supervised diet, cook until the yolks are firm.

Good to know

Keep the chickpea water

The liquid in the tin, called aquafaba, can stand in for some of the water or stock in the curry and soup and gives a silkier texture. If you would rather not use it, rinse the chickpeas well instead.

Fry spices before liquid

Ground spices taste dusty if they go straight into the tomatoes. Thirty seconds to a minute in the hot oil with the onion wakes them up; any longer and they can scorch.

Freeze the curry and soup

Both freeze well for up to three months. Cool them within two hours, portion them into containers, then defrost in the fridge and reheat until piping hot.

Questions people ask

Can I use dried chickpeas?

Yes. 250g dried chickpeas, soaked overnight and simmered for 1–1½ hours until tender, replaces two 400g tins. Cook them fully before they go into any of these recipes.

How do I make the curry richer?

Stir in a few tablespoons of coconut milk, natural yoghurt or a knob of butter at the end. If using yoghurt, take the pan off the heat first so it doesn’t split.

Are these recipes vegan?

The curry and the soup are vegan as written, as long as your stock is. The shakshuka uses eggs; swap them for cubes of firm tofu warmed through in the sauce for a vegan version.
