3 recipes using prawns and noodles

What can I make with prawns and noodles?

Prawns and noodles make one of the quickest dinners from the freezer and the cupboard. Raw prawns cook in about three minutes, most dried egg or rice noodles in four, so the whole meal is decided by how quickly you can chop a clove of garlic and a few spring onions.

That speed is also the risk. Prawns go from tender to rubbery in a minute, and noodles left sitting in a colander glue themselves into a block. Every recipe below cooks the prawns last, or only until they turn pink, and rinses or tosses the noodles in oil so they stay loose.

Frozen raw king prawns give the best texture, and a bag in the freezer means this dinner is always an option. Cooked prawns work too, but they only need warming, not cooking, so add them at the very end. Medium egg noodles suit the stir-fry, flat rice noodles suit the soup, and either works in the salad.

Garlic and chilli prawn stir-fried noodles

Egg noodles tossed in a hot wok with king prawns, garlic, chilli, greens and a simple soy and honey sauce. Under 20 minutes, start to finish.

10 min prep · 8 min cookingServes 2wok or large frying pan, saucepan or kettle, colander

You have (Prawns + Noodles)

  • 200g raw peeled king prawns, defrosted if frozen
  • 2 nests (about 150g) medium dried egg noodles

You’d add

  • 2 garlic cloves, thinly sliced
  • 1 red chilli, sliced (or ½ tsp chilli flakes)
  • 2 heads pak choi or a large handful of tenderstem broccoli, sliced
  • 3 spring onions, sliced
  • 2 tbsp soy sauce and 1 tsp honey, mixed
  • 1 tsp sesame oil
  • 1 tbsp vegetable oil (store cupboard)

Method

  1. Cook the noodles in boiling water according to the packet, usually 4 minutes. Drain, rinse under the cold tap and toss with a few drops of the sesame oil so they do not stick.
  2. Heat the vegetable oil in the wok over a high heat. Add the garlic and chilli and stir for 20 seconds, then add the pak choi or broccoli and stir-fry for 2 minutes.
  3. Add the prawns and stir-fry for 2–3 minutes until they have turned pink all over and are opaque all the way through.
  4. Add the noodles, the sauce, the rest of the sesame oil and most of the spring onions and toss for 1–2 minutes until everything is hot and glossy.
  5. Serve straight away with the rest of the spring onions on top.

Raw prawns are cooked when they have turned pink all over and are white and opaque right through, with no grey, glassy flesh left. Defrost frozen prawns in the fridge, not on the worktop.

Prawn and coconut laksa-style noodle soup

A fragrant, spicy coconut broth built on a spoonful of red curry paste, ladled over rice noodles and topped with prawns, beansprouts and lime.

10 min prep · 12 min cookingServes 2medium saucepan, heatproof bowl or second pan for the noodles

You have (Prawns + Noodles)

  • 200g raw peeled king prawns
  • 150g flat rice noodles

You’d add

  • 2 tbsp Thai red curry paste
  • 400ml tin coconut milk
  • 400ml chicken or vegetable stock
  • 1 tbsp fish sauce or soy sauce
  • 100g beansprouts, a handful of coriander and 1 lime
  • 1 tsp vegetable oil (store cupboard)

Method

  1. Put the rice noodles in a heatproof bowl, cover with boiling water and leave to soften according to the packet, then drain.
  2. Meanwhile, heat the oil in the saucepan over a medium heat and fry the curry paste for 1 minute until fragrant.
  3. Pour in the coconut milk and stock, add the fish sauce and bring to a gentle simmer for 5 minutes.
  4. Add the prawns and simmer for 3 minutes until they are pink and opaque all the way through. Squeeze in the juice of half the lime and taste; add more fish sauce for salt or lime for sharpness.
  5. Divide the noodles between deep bowls, ladle over the soup and prawns, and top with beansprouts, coriander and lime wedges.

Simmer until every prawn is pink and opaque throughout. If you use cooked prawns, add them for the last minute only and heat until steaming.

Good to know

Defrosting prawns quickly and safely

The best way is overnight in the fridge. If you forgot, put the sealed bag in a bowl of cold water for 20–30 minutes, changing the water once, and cook the prawns straight away.

Dry the prawns before they hit the pan

Defrosted prawns carry a lot of water, which stops them searing and makes the sauce thin. Pat them dry with kitchen paper first.

Stop noodles clumping

Rinsing cooked noodles under cold water washes off the surface starch that glues them together. A few drops of oil afterwards keep them separate until you need them.

Questions people ask

Can I use cooked prawns instead of raw?

Yes. Add them at the very end of the stir-fry or soup and heat for a minute until steaming. Cooking them for longer makes them tough.

Which noodles should I buy?

Dried egg noodle nests are the most versatile and keep for months. Flat rice noodles are best in soup. Straight-to-wok noodles work in the stir-fry; skip the boiling step and loosen them with a splash of water in the pan.

How do I make these less spicy?

Leave out the fresh chilli in the stir-fry and halve the curry paste in the soup. Serve chilli sauce on the side so everyone can add their own.
