3 recipes using salmon fillets and broccoli

What can I make with salmon and broccoli?

Salmon and broccoli cook in about the same time, which makes them one of the easiest pairings to get on a plate together. The oily, rich fish needs something green and slightly bitter alongside it, and broccoli’s florets catch any sauce or glaze you put on the salmon.

Salmon is best taken off the heat just as it turns opaque and starts to flake. Cooked further, it dries out and the white protein seeps from the sides. A fillet about 2.5cm thick roasts in 12–15 minutes at a moderate heat, so the broccoli can share the tray for the whole time.

The three recipes below go from a one-tray dinner to a creamy pasta to fishcakes you can make ahead. Fresh or frozen fillets both work; defrost frozen ones in the fridge overnight and pat them dry so they roast rather than steam.

Honey soy salmon and broccoli traybake

Salmon fillets glazed with honey, soy and garlic roasted on one tray with broccoli florets until the edges char. Serve with rice or noodles.

10 min prep · 15 min cookingServes 2baking tray, small bowl, oven

You have (Salmon fillets + Broccoli)

  • 2 skinless salmon fillets (about 125g each)
  • 1 head of broccoli, cut into florets

You’d add

  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 garlic clove, crushed
  • 1 tsp sesame seeds (optional)
  • 1 tbsp oil (store cupboard)

Method

  1. Heat the oven to 200°C (180°C fan, gas 6). Toss the broccoli with the oil on the baking tray and roast for 5 minutes.
  2. Mix the soy sauce, honey and garlic in the small bowl.
  3. Push the broccoli to the sides, put the salmon in the middle and spoon the glaze over the fillets, letting a little run onto the broccoli.
  4. Roast for 10–12 minutes until the salmon is opaque all the way through and flakes easily and the broccoli is tender with charred tips. Scatter over the sesame seeds to serve.

Salmon is cooked when the flesh has turned from translucent to opaque throughout and flakes easily with a fork.

Creamy salmon and broccoli penne

Flakes of pan-cooked salmon and broccoli in a lemony crème fraîche sauce with penne. The broccoli cooks in the pasta water to save a pan.

5 min prep · 15 min cookingServes 2large saucepan, large frying pan, colander

You have (Salmon fillets + Broccoli)

  • 2 salmon fillets (about 125g each)
  • ½ head of broccoli, cut into small florets

You’d add

  • 200g penne
  • 150ml crème fraîche
  • 1 lemon, zest and juice
  • 1 garlic clove, crushed
  • 1 tbsp oil (store cupboard)
  • salt and pepper (store cupboard)

Method

  1. Cook the penne in a large pan of salted boiling water. Add the broccoli for the last 4 minutes. Scoop out a mug of cooking water, then drain.
  2. Meanwhile, heat the oil in the frying pan over a medium heat and cook the salmon for 4 minutes on each side until opaque all the way through. Lift onto a plate and flake into large pieces, discarding any skin.
  3. Add the garlic to the pan for 30 seconds, then stir in the crème fraîche, lemon zest and a splash of the cooking water.
  4. Add the pasta and broccoli and toss until coated, then gently fold in the salmon. Season with lemon juice, salt and pepper and serve.

Check the salmon is opaque through to the centre and flakes easily before you flake it into the sauce.

Salmon and broccoli fishcakes

Crisp fishcakes of flaked salmon, mashed potato and finely chopped broccoli, fried until golden. Good with a green salad and tartare sauce.

25 min prep · 30 min cookingServes 4saucepan, baking tray and oven for the salmon, large frying pan, potato masher

You have (Salmon fillets + Broccoli)

  • 2 salmon fillets (about 250g total)
  • 150g broccoli, very finely chopped

You’d add

  • 400g floury potatoes, peeled and chopped
  • 1 lemon, zest only
  • 2 spring onions, finely sliced
  • 1 egg, beaten
  • 60g dried breadcrumbs
  • 3 tbsp oil (store cupboard)
  • salt and pepper (store cupboard)

Method

  1. Boil the potatoes in salted water for 15 minutes until tender, adding the broccoli for the last 2 minutes. Drain well and mash roughly, then leave to cool a little.
  2. Meanwhile, roast the salmon at 200°C (180°C fan, gas 6) for 12–15 minutes until opaque and flaking. Cool slightly and flake, discarding any skin.
  3. Fold the salmon, lemon zest and spring onions into the potato and season. Shape into eight cakes and chill for 15 minutes to firm up.
  4. Dip each cake in the beaten egg, then the breadcrumbs. Heat the oil in the frying pan over a medium heat and fry the fishcakes for 3–4 minutes each side until golden and hot through.

Cook the salmon fully before mixing. Fry the fishcakes until they are piping hot in the middle, and keep any uncooked ones in the fridge until frying.

Good to know

Look for opaque, not firm

Salmon is done the moment the centre turns from glassy to opaque and the flesh separates into flakes when pressed. If white beads of protein appear on the sides, it is starting to overcook.

Use the stalk too

Broccoli stalks are as good as the florets. Peel off the tough outer layer, slice the core into coins and cook it alongside the florets in any of these recipes.

Pat the fish dry

Moisture on the surface stops salmon browning and makes it stick. Dry the fillets with kitchen paper before glazing or frying, especially if they were frozen.

Questions people ask

Can I cook salmon from frozen?

Many packs give oven times from frozen, so follow yours. For the pasta and fishcakes, defrost overnight in the fridge first, which gives more even cooking.

Skin on or skin off?

Either works. Skin-on fillets are easier to keep in one piece in the frying pan; cook them skin-side down for most of the time. For the traybake, skinless lets the glaze coat more of the fish.

How long does cooked salmon keep?

Cool it quickly, keep it covered in the fridge and eat within two days. It is good cold, flaked into a salad, or reheated once until piping hot.
