3 recipes using halloumi and peppers

What can I make with halloumi and peppers?

Halloumi is the cheese that behaves like meat in a pan. It has a high melting point, so instead of running it forms a golden crust when fried, grilled or roasted, while the inside goes soft and squeaky. Peppers are the natural partner: roast or char them and they turn sweet and slightly smoky, which balances halloumi’s saltiness.

The two cook at different speeds, and that shapes all three recipes. Peppers need 20 minutes or more in the oven, or a good blast in a hot pan, to soften and sweeten; halloumi needs only a few minutes and turns rubbery and hard if it is cooked too long or left to go cold. So the peppers always go first and the cheese joins them at the end.

Red, yellow and orange peppers are sweeter than green ones and are better for roasting. A standard 225g or 250g block of halloumi serves two as a main, and nothing in these recipes needs extra salt until you have tasted it.

Roast pepper and halloumi traybake with herby couscous

Peppers and red onion roasted until soft and charred, with slices of halloumi added for the last ten minutes, over couscous soaked with lemon and herbs.

10 min prep · 35 min cookingServes 2large baking tray, oven, heatproof bowl

You have (Halloumi + Peppers)

  • 225g block halloumi, cut into 8 slices
  • 3 peppers (red, yellow or orange), cut into thick strips

You’d add

  • 1 red onion, cut into wedges
  • 400g tin chickpeas, drained
  • 1 tsp ground cumin or dried oregano
  • 120g couscous and 180ml hot vegetable stock
  • 1 lemon and a handful of parsley or mint
  • 1 tsp honey (optional)
  • 2 tbsp olive oil (store cupboard)

Method

  1. Heat the oven to 220°C (200°C fan, gas 7). Toss the peppers, onion and chickpeas on the tray with the oil and the cumin or oregano and roast for 20–25 minutes until soft and charred at the edges.
  2. Lay the halloumi slices on top of the vegetables and roast for 10 minutes more until golden. Drizzle with the honey, if using, for the last 2 minutes.
  3. Meanwhile, put the couscous in the bowl, pour over the hot stock, cover with a plate and leave for 5 minutes. Fluff with a fork and stir in the lemon zest, a squeeze of juice and the chopped herbs.
  4. Spoon the couscous onto plates, top with the vegetables and halloumi, and squeeze over more lemon. Eat straight away while the cheese is soft.

Good to know

Halloumi waits for nobody

Fried halloumi is at its best in the first five minutes. As it cools it firms up and squeaks more, so cook it last and get it to the table straight away.

Take the skin off charred peppers if you like

If your peppers blacken heavily in the oven, tip them into a bowl and cover it for 10 minutes. The steam loosens the skins, which then slip off easily and leave silky flesh.

Pat it dry first

Halloumi is packed in brine. Drain it and dry the slices on kitchen paper before cooking, so they brown rather than spit and steam in the pan.

Questions people ask

Do I need to soak halloumi to make it less salty?

It is not usually necessary, but if you find it too salty, soak the slices in cold water for 10–15 minutes and pat them dry. They will still brown well.

Can I cook halloumi in an air fryer?

Yes. Brush the slices with a little oil and air fry at 200°C for 6–8 minutes, turning halfway, until golden. Air-fry the peppers first for 12–15 minutes, then add the cheese.

What can I use instead of halloumi?

Paneer behaves in a similar way and works in all three recipes; it is milder, so season it a little more. Feta crumbled over at the end works in the traybake and pasta, but it will not fry.
