3 recipes using leftover chicken

What can I make with leftover chicken?

The meat left on a Sunday roast is already seasoned and already cooked, which means the hard part of dinner is done. What it needs is moisture and a bit of contrast: a sauce to keep it juicy, something crisp alongside it, or a hot broth to warm it through without drying it out.

Pull the meat off the bones while the carcass is still slightly warm, because it comes away far more easily than it does once the fat has set in the fridge. Shred the brown meat and the white together: the darker thigh meat carries more flavour and stops the breast tasting like cardboard.

The three dinners below each treat the chicken gently. It goes into the pie filling at the very end, sits between tortillas for just long enough to heat through, and is dropped into simmering broth for the last few minutes. Overcooking already-cooked chicken is what makes leftovers stringy.

Leftover chicken and leek pie

A creamy leek sauce wrapped around shredded roast chicken under a sheet of ready-rolled puff pastry. Comfort food from what the roast left behind.

15 min prep · 40 min cookingServes 4large frying pan or saucepan, pie dish (about 1.2 litres), oven

You have (Leftover chicken)

  • 400g leftover roast chicken, shredded into bite-sized pieces

You’d add

  • 2 leeks, trimmed, washed and sliced
  • 30g butter
  • 3 tbsp plain flour
  • 350ml hot chicken stock (a cube is fine)
  • 100ml double cream or crème fraîche
  • 1 tsp Dijon mustard
  • 320g sheet ready-rolled puff pastry
  • 1 egg, beaten, to glaze
  • salt and pepper (store cupboard)

Method

  1. Heat the oven to 200°C (180°C fan, gas 6). Melt the butter in the pan over a medium heat and cook the leeks gently for 8 minutes until soft but not browned.
  2. Stir in the flour and cook for 1 minute, then gradually pour in the hot stock, stirring all the time, until you have a smooth sauce. Simmer for 3 minutes.
  3. Take the pan off the heat, stir in the cream, mustard and chicken, and season well with salt and pepper. Spoon the filling into the pie dish and leave it to cool for 10 minutes so the pastry does not go soggy.
  4. Lay the pastry over the top, trim the edges with a knife, press them onto the rim of the dish and cut a small slit in the middle to let steam out. Brush with the beaten egg.
  5. Bake for 25–30 minutes until the pastry is puffed and deep golden and the filling is bubbling at the edges. Check the centre is piping hot before serving.

Leftover chicken should have been cooled and put in the fridge within two hours of cooking, and eaten within two days. Reheat it only once, until it is steaming hot all the way through. Eat it the day you bake it; the chicken has had its one reheat.

Crispy leftover chicken quesadillas

Shredded chicken, melting cheese and a little sweetcorn pressed between tortillas and fried until crisp. A fast lunch or a light dinner in 15 minutes.

5 min prep · 10 min cookingServes 2large non-stick frying pan, fish slice or spatula

You have (Leftover chicken)

  • 200g leftover roast chicken, shredded

You’d add

  • 4 large flour tortillas
  • 100g grated cheddar
  • 100g tinned sweetcorn, drained
  • 2 spring onions, sliced
  • ½ tsp smoked paprika or a pinch of chilli flakes
  • 1 tsp oil (store cupboard)

Method

  1. Warm the chicken and sweetcorn with the paprika in the frying pan for 3–4 minutes until steaming hot, then tip into a bowl and mix with the cheese and spring onions. Wipe out the pan.
  2. Spread half the mixture over one tortilla, leaving a small border, and press a second tortilla on top. Repeat with the other two tortillas.
  3. Brush the pan with a little oil and set it over a medium heat. Fry one quesadilla for 3–4 minutes, pressing it down with the spatula, until the underside is golden.
  4. Slide it onto a plate, put the pan over the top, flip both together and return it to the heat for another 3 minutes until the cheese has melted and the filling is hot. Repeat with the second.
  5. Cut each into wedges and serve straight away, with salsa or soured cream if you have some.

Make sure the filling is hot right through before serving: cheese melting at the edges is a good sign, but cut one wedge to check the middle.

Leftover chicken noodle soup with ginger

A clear, gingery broth with egg noodles and greens, with the chicken added at the end so it stays tender. Good for using up the last scraps.

10 min prep · 15 min cookingServes 2medium saucepan, grater

You have (Leftover chicken)

  • 200g leftover roast chicken, shredded

You’d add

  • 800ml chicken stock
  • 2 nests (about 100g) dried egg noodles
  • 3cm piece of fresh ginger, peeled and grated
  • 1 garlic clove, grated
  • 1 carrot, cut into thin matchsticks
  • 2 handfuls of spinach or sliced pak choi
  • 1–2 tbsp soy sauce
  • 2 spring onions, sliced

Method

  1. Pour the stock into the saucepan, add the ginger, garlic and carrot, and bring to the boil. Simmer for 5 minutes so the ginger flavours the broth.
  2. Add the noodles and cook for the time on the packet, usually 4 minutes, stirring once to separate the nests.
  3. Stir in the chicken and greens and simmer for 2–3 minutes until the greens have wilted and the chicken is steaming hot.
  4. Season with soy sauce to taste, ladle into bowls and scatter over the spring onions.

Bring the soup back to a simmer after adding the chicken so it is steaming hot throughout. Do not reheat the chicken a second time.

Good to know

Strip the carcass while it’s warm

Meat comes off a roast chicken in half the time while it is still a little warm. Get it off the bones, into a covered container and into the fridge within two hours of the roast coming out of the oven.

Add it last, heat it fully

Cooked chicken only needs heating, not cooking again. Stir it into a hot sauce or broth at the end and simmer until it is steaming throughout; longer than that and it turns dry and stringy.

Freeze what you won’t use in two days

If you know you will not get to it, freeze the shredded meat flat in a bag on the day of the roast. Defrost it in the fridge overnight and use it within a day of thawing.

Questions people ask

How long does leftover roast chicken keep?

Cooled quickly and kept covered in the fridge, use it within two days. If it has been out on the side for more than two hours, throw it away rather than risk it.

Can I reheat leftover chicken twice?

No. Reheat it once, until it is steaming hot all the way through, and throw away anything left after that. Take out only the portion you need each time.

Can I use shop-bought cooked chicken instead?

Yes, a ready-roasted chicken or a pack of cooked chicken pieces works in all three recipes. Check the use-by date and treat it exactly like your own leftovers.
