3 recipes using bacon and mushrooms

What can I make with bacon and mushrooms?

Bacon and mushrooms share a pan in a full English for good reason. Bacon brings salt and fat; mushrooms bring a deep, savoury flavour but need fat and a hot pan to get there. Fry the bacon first and the mushrooms brown in what it leaves behind, so you season one with the other without adding much.

The trick most people miss is patience with the mushrooms. They are mostly water, and if you crowd them or stir them constantly they stew grey in their own juice. Give them space in a hot pan, leave them alone for a couple of minutes, and they turn golden and meaty. Salt them at the end, not the start, or they weep.

Smoked or unsmoked streaky gives the most fat and crunch; back bacon is leaner and better cut into strips. Chestnut mushrooms have more flavour than white button ones, but either works in all three recipes here.

Creamy bacon and mushroom tagliatelle

Crisp bacon and well-browned mushrooms in a light garlic cream sauce, loosened with pasta water so it coats the ribbons without being heavy.

10 min prep · 15 min cookingServes 2large saucepan, large frying pan, colander or tongs

You have (Bacon + Mushrooms)

  • 6 rashers smoked streaky bacon, chopped
  • 250g chestnut mushrooms, sliced

You’d add

  • 200g dried tagliatelle or spaghetti
  • 2 garlic cloves, crushed
  • 100ml double cream or crème fraîche
  • 30g Parmesan, grated, plus extra to serve
  • 1 tbsp oil (store cupboard)
  • salt and black pepper (store cupboard)

Method

  1. Cook the pasta in a large pan of well-salted boiling water according to the packet. Before draining, scoop out a mug of the cooking water.
  2. Meanwhile, fry the bacon in the frying pan over a medium-high heat for 5–6 minutes until crisp and cooked through. Lift it out, leaving the fat behind.
  3. Add the oil and the mushrooms in a single layer. Leave them undisturbed for 2–3 minutes, then stir and cook for 3–4 minutes more until golden. Stir in the garlic for 1 minute.
  4. Pour in the cream and a splash of the pasta water and bubble for 1 minute. Add the drained pasta, the bacon and the Parmesan and toss, adding more pasta water until the sauce is glossy and coats every strand.
  5. Season with lots of black pepper and a little salt if needed, and serve with extra Parmesan.

Cook the bacon until it is crisp at the edges with no translucent, raw-looking fat left.

No-stir baked bacon and mushroom risotto

All the flavour of a risotto without twenty minutes of stirring: the rice cooks in the oven in stock, then gets a vigorous beat with Parmesan at the end.

10 min prep · 35 min cookingServes 4ovenproof casserole with a lid, oven

You have (Bacon + Mushrooms)

  • 200g bacon lardons or chopped streaky bacon
  • 300g mushrooms, sliced

You’d add

  • 1 onion, finely chopped
  • 300g risotto rice (arborio or carnaroli)
  • 1 litre hot chicken or vegetable stock
  • 50g Parmesan, grated
  • a few sprigs of thyme (optional)
  • 1 tbsp oil and a knob of butter (store cupboard)
  • salt and pepper (store cupboard)

Method

  1. Heat the oven to 200°C (180°C fan, gas 6).
  2. Heat the oil in the casserole on the hob over a medium-high heat and fry the bacon for 5 minutes until golden. Add the mushrooms and cook for 5 minutes until they have browned and any liquid has gone.
  3. Add the onion and thyme and cook for 3 minutes, then stir in the rice for 1 minute until coated.
  4. Pour in 900ml of the stock, stir once, bring to a simmer, then cover and bake for 20 minutes.
  5. Take it out, add the remaining stock, the butter and the Parmesan and beat hard with a wooden spoon for a minute until creamy. Season with pepper, taste for salt and serve straight away.

Fry the bacon until fully cooked before the rice goes in. Cool leftover risotto within an hour, keep it in the fridge for no more than a day and reheat only once until steaming hot.

Garlicky bacon and mushrooms on toast

An under-20-minute supper or brunch: mushrooms browned in bacon fat with garlic and parsley, piled onto thick toast with the crisp bacon on top.

5 min prep · 12 min cookingServes 2large frying pan, toaster or grill

You have (Bacon + Mushrooms)

  • 4 rashers back or streaky bacon
  • 250g mushrooms, thickly sliced or halved

You’d add

  • 2 thick slices sourdough or bloomer
  • 1 garlic clove, crushed
  • 1 tsp Worcestershire sauce or a squeeze of lemon
  • a small handful of parsley, chopped
  • butter (store cupboard)
  • salt and black pepper (store cupboard)

Method

  1. Fry the bacon in the frying pan over a medium heat for 5–6 minutes, turning once, until crisp and cooked through. Set aside on kitchen paper.
  2. Turn the heat up, add a knob of butter to the bacon fat and tip in the mushrooms. Cook for 5 minutes, stirring only every minute or so, until golden.
  3. Stir in the garlic for 30 seconds, then the Worcestershire sauce and parsley. Season with pepper and a pinch of salt.
  4. Meanwhile, toast and butter the bread. Pile the mushrooms on top, add the bacon and spoon over any pan juices.

Cook the bacon until the fat is crisp and there is no raw pink meat.

Good to know

Do not wash mushrooms under the tap

Wet mushrooms steam instead of browning, so get them dry before they go in the pan: brush them, or rinse quickly and pat dry with kitchen paper just before cooking.

Cut bacon cold

Bacon straight from the fridge is far easier to chop into neat strips than bacon that has warmed up. Kitchen scissors are quicker than a knife.

Storing opened bacon

Once the pack is open, wrap the rest tightly and use it within the date on the pack or a few days. Bacon also freezes well in portions of two or three rashers, ready to cook from frozen in a low pan.

Questions people ask

Can I use pancetta or lardons?

Yes. They are interchangeable with chopped streaky bacon in every recipe here. Pancetta is a little saltier, so taste before adding salt.

Which mushrooms are best?

Chestnut mushrooms have more flavour than white button ones. Big flat mushrooms are great sliced thickly on toast. A few dried porcini, soaked in the hot stock, make the risotto taste far richer.

Can I make these without cream?

For the pasta, swap the cream for an extra 30g of Parmesan and more pasta water; tossing hard will still make a silky sauce. The risotto and toast need no cream at all.
