3 recipes using eggs and potatoes

What can I make with eggs and potatoes?

Eggs and potatoes are cheap, keep for ages and together make a proper meal. The potato brings bulk and a crisp or creamy texture depending on how you cook it; the egg brings richness and binds everything together.

The type of potato matters more here than in most dishes. Waxy potatoes such as Charlotte or new potatoes hold their shape when sliced and fried, so they suit a tortilla or a salad. Floury ones such as Maris Piper or King Edward break down and go fluffy inside, which is what you want in a crunchy hash.

Each of the three dinners below starts by getting the potatoes properly cooked before the eggs go anywhere near them. Undercooked potato is the most common way these dishes go wrong, because eggs set in minutes and potatoes take a good while longer.

Spanish potato and onion tortilla

Thin slices of potato and onion cooked slowly in olive oil, then set in beaten egg into a thick golden cake. Eat warm or at room temperature.

15 min prep · 35 min cookingServes 4non-stick frying pan (about 24cm) with sloping sides, large plate for flipping, mixing bowl

You have (Eggs + Potatoes)

  • 6 eggs
  • 600g waxy potatoes, peeled and thinly sliced

You’d add

  • 1 large onion, thinly sliced
  • 100ml olive oil (store cupboard)
  • salt (store cupboard)

Method

  1. Heat the oil in the frying pan over a medium-low heat. Add the potatoes and onion with a good pinch of salt and cook gently for 20 minutes, turning now and then, until the potatoes are completely tender but not crisp.
  2. Beat the eggs in a large bowl with a pinch of salt. Lift the potatoes and onion out with a slotted spoon, leaving the oil behind, and stir them into the eggs. Leave for 5 minutes.
  3. Pour all but 1 tbsp of the oil out of the pan (keep it for another day). Return the pan to a medium-low heat, tip in the egg mixture and level it.
  4. Cook for 6–8 minutes until the base and sides are set but the top is still a little loose. Run a spatula round the edge.
  5. Put the plate over the pan, turn the tortilla out onto it with one confident flip, then slide it back into the pan uncooked-side down. Cook for 3–4 minutes more until set through, then rest for 5 minutes before cutting.

Runny yolks are safe with British Lion-stamped eggs, including for pregnant women, children and older people. If your eggs are not Lion-stamped, or you are cooking for someone severely immunocompromised on a medically supervised diet, cook the tortilla until the centre is firm with no liquid egg.

Crispy potato hash with fried eggs

Parboiled potato chunks fried until crunchy with onion and smoked paprika, topped with fried eggs. A brunch that works just as well at dinner.

10 min prep · 25 min cookingServes 2saucepan, colander, large frying pan

You have (Eggs + Potatoes)

  • 4 eggs
  • 500g floury potatoes, cut into 2cm chunks (skin on is fine)

You’d add

  • 1 onion, chopped
  • 1 red pepper, chopped
  • 1 tsp smoked paprika
  • 3 tbsp oil (store cupboard)
  • salt and pepper (store cupboard)

Method

  1. Boil the potatoes in salted water for 6–7 minutes until just tender at the edges. Drain well and leave to steam dry in the colander for a few minutes.
  2. Heat 2 tbsp of the oil in the frying pan over a medium-high heat. Add the potatoes in a single layer and fry for 10 minutes, turning only every few minutes, until crisp and golden on several sides.
  3. Add the onion and pepper and cook for 5 minutes more until soft. Stir in the paprika and season well.
  4. Push the hash aside, add the remaining oil and fry the eggs to your liking. Serve the eggs on top of the hash.

Fry the eggs until the whites are fully set. Runny yolks are safe with British Lion-stamped eggs, including for pregnant women, children and older people. If your eggs are not Lion-stamped, or you are cooking for someone severely immunocompromised on a medically supervised diet, cook until the yolks are firm.

Warm new potato and egg salad

Halved new potatoes and jammy boiled eggs in a mustardy dressing with capers and herbs. Dressing the potatoes while warm makes them soak it up.

10 min prep · 20 min cookingServes 2saucepan, small bowl for the dressing, colander

You have (Eggs + Potatoes)

  • 4 eggs
  • 500g new potatoes, halved if large

You’d add

  • 1 tbsp Dijon or wholegrain mustard
  • 1 tbsp white wine vinegar
  • 1 tbsp capers or chopped gherkins
  • small bunch of chives or parsley, chopped
  • 3 tbsp olive oil (store cupboard)
  • salt and pepper (store cupboard)

Method

  1. Put the potatoes in the saucepan, cover with cold salted water, bring to the boil and simmer for 12–15 minutes until a knife slides in easily.
  2. For the last 8 minutes, lower the eggs into the same pan for set yolks that are still soft at the centre (10 minutes if you want them fully firm).
  3. Whisk the mustard, vinegar and oil with salt and pepper in the small bowl.
  4. Drain everything, run the eggs under cold water and peel them. Toss the warm potatoes with the dressing, capers and herbs, then halve the eggs and arrange them on top.

Runny yolks are safe with British Lion-stamped eggs, including for pregnant women, children and older people. If your eggs are not Lion-stamped, or you are cooking for someone severely immunocompromised on a medically supervised diet, boil the eggs for 10 minutes so the yolks are firm. Keep leftovers in the fridge and eat within a day.

Good to know

Pick the right potato

Use waxy potatoes, like Charlotte or salad potatoes, where you want slices or chunks that hold together. Use floury Maris Piper or King Edward when you want crisp edges and a fluffy middle, as in the hash.

Dry before you fry

Parboiled potatoes crisp far better if they steam dry for a few minutes after draining. Wet potatoes spit in the oil and stew instead of browning.

Don’t rush the tortilla

A tortilla is cooked low and slow. If the oil bubbles hard while the potatoes cook, turn the heat down; you want them soft and pale, not fried crisp, so they meld with the egg.

Questions people ask

Can I use leftover boiled or roast potatoes?

Yes, and it saves time. Cut them into chunks and go straight to frying for the hash, or slice them into the beaten eggs for a quicker tortilla. They need only heating through.

Do I need to peel the potatoes?

Not for the hash or the salad: scrub them and leave the skins on. For a classic tortilla, peeled potatoes give a softer, more even texture, but unpeeled still works.

How do I flip a tortilla without breaking it?

Make sure the edges are set and loosened with a spatula first, use a plate wider than the pan, and turn it in one quick movement. If it cracks, slide it back in and press it together; it will set as it finishes cooking.
